“The Need to Know” During Recalls and Outbreaks – Advice from a Friend

Our friend and colleague Bill Marler recently posted a great article on what consumers need to know during recalls and outbreaks.

The Centers for Disease Control and Prevention (CDC) estimates that Salmonella causes about 1.2 million illnesses and 450 deaths in the United States every year. The vast majority of these illnesses come from food consumption.

Most of the persons infected with Salmonella experience diarrhea, fever, and abdominal cramps over the course of 4 to 7 days, and most people recover without receiving treatment. However, the effect of a Salmonella infection can range from no symptoms at all to death.

How can Salmonella infection be prevented?

Generally, safe cooking and food preparation practices can kill and prevent the spread of Salmonella, but here are a few other tips from our friend, Bill Marler:
• Always wash your hands before you start preparing food
• Cook poultry until it reaches an internal temperature of 165oF
• Cook beef until it reaches 160oF. High quality steaks can be safely cook to 145oF
• Cook eggs until they reach 160oF or until the yoke is solid. Pasteurized eggs are available in some grocery stores, and
• Never drink raw, unpasteurized milk
